Background: Executive Chef at Ritz Carlton International and Neiman Marcus. Professor at Le Cordon Blue, Paris, Director of New Projects Development for FOOD Network TV, and top level brass for American Culinary Federation.

Notable: Highly active in the culinary community, especially fundraising. It’s a Santa sized list of good works.

Currently: Executive Director at Café Momentum

Background: Chef/Owner at Parigi in Dallas

Notable: Chad’s twitter page says it best “Just trying to make the world a better place… One meal at a time.” Chad walks this talk.


Specialty – Oak Cliff & using fresh locally grown ingredients

Currently: Co-Owner Bolsa, Bolsa Mercado, Smoke, Chicken Scratch / The Foundry

Background: Started as a bartender and hails from Madrid.

Notable: Opening three ultra popular restaurants in the Cliff plus a local market, all offering craft cocktails and chef inspired food made with as many local ingredients as possible in renovated existing spaces.

Currently: Director of Special Events at Trulucks Seafood Steak & Crab House.

Background:Plans, coordinates and executes upscale private events for Trulucks and has for over 13 years.  Notable public speaker.

Notable: Understands the business of catering and hosting memorable events. Leads industry specific local organizations.


Specialty – Restaurant Real Estate

Currently: Restaurant/Retail Broker | Sr. VP at UCR Urban

Background: Having started his real estate career in 1997, Michael has a focus on working with retail developments, restaurants and hospitality.

Notable: Helps find location, location, location for many of our favorite restaurants and chefs — from Dallas and beyond.


Specialty – Concept and Planning

Currently: Founder / Owner at Greenz Salads and Kitchen LTO

Background: First career spent as an account supervisor at Digital Advertising agencies. Launched Greenz Salads Franchise in 2004.

Specialty – Mixology

Currently: Co-Founder / Spirit Concoctor of The 86 company

Background: Co-Founder of New York’s Employee’s Only, Cocktail Menu developer in Dallas at Neighborhood Services, Bolsa and Marquee Grill and influencer of the entire Dallas craft cocktail scene.

Notable: Also used to be a chef in earlier days. Passionate about the pairing of cocktails with food.
